45 min. Applied theory: the five tastes, umami in meats, synergies, and contrasts. How to build memorable flavor profiles for signature burgers.

Premium cuts and aging

1 h. Selection of noble cuts (brisket, short rib, chuck), custom blends, dry and wet aging. Grinding and forming techniques for perfect textures.

Advanced cooking techniques

1.5 h. Intensive practice: reverse sous-vide, high-temperature searing, cold and hot smoking, glazing with reductions, and use of griddle vs. grill.

Signature sauces and ferments

1 h. Elaboration of mother sauces (signature mayonnaises, spiced ketchups, fermented mustards) and derivatives. Introduction to quick ferments for toppings.

Creative plating and photography

1 h. Principles of visual composition, use of dishware, heights, and color. Practical photography session with natural and artificial light to capture the perfect burger.

Pairing and complete experience

Methodology

The approximately 6-hour in-person day combines just the right dose of theory with intensive practice from the very first minute. You will work at your own fully equipped individual station, with all premium ingredients and cuts included. The group is limited to a maximum of 10 students to guarantee personalized attention from chef Andrés Valerio, who will guide you step by step in each technique, correcting and enhancing your style. It's not a demonstration: you cook, plate, and photograph each creation.

We manage small groups and flexible dates. By filling out the reservation form or contacting us via WhatsApp, we will inform you of the next confirmed sessions and you can choose the one that best fits your schedule.

It is not mandatory, but it is recommended. This course assumes you master the fundamentals: forming, basic cooking, and ingredient balance. If you have verifiable previous experience as a cook or advanced enthusiast, you can join without any problems.

It includes all premium ingredients and cuts, use of an individual station, recipe book and technical sheets, certificate of participation, lifetime access to the online platform, and post-course support. The regular price is RD$7,400, but it now has a special discount of RD$5,400 (US$90).
